Blueberry Kale and Cacao Smoothie
Now that Matt and I are back on a really strict budget, I have stopped indulging in Daily Harvest smoothies. I felt horrible for impacting the environment in such negative ways anyway. But I still enjoyed getting so many fruits and veggies every day with such minimal effort! I tried to replicate my favorite item of all: a blueberry kale and cacao smoothie.
One of the biggest benefits to the Daily Harvest smoothies was that everything was already in a cup ready to go. You could just dump, add a liquid, and blend. I’ve been trying to recreate a similarly easy experience.
The first step is to stir together:
- 1 c almond butter
- 1/2 c cacao powder
- 1 T vanilla extract
- ½ tsp Himalayan Sea Salt
You divide the mixture into an ice cube tray and freeze until hard.
Then you build each freezer cup (I use these) by adding:
- 1 c blueberries
- 1/2 of a frozen banana (sliced)
- A pitted and chopped date
I store the cup in the freezer so I can pull together a smoothie quickly in the morning. First, I dump the ingredients of the cup + 2 cups of almond milk + 1-2 cubes + a large handful of kale. I blend all of it together, and it turns into a blueberry kale cacao smoothie that even children like!

Thank you for this recipe, Sara! Yes to eating habits being off. I notice that I actually have less of an appetite, while my child has an immense appetite. It’s hard to tell if it’s related to a growth spurt (she is at the second plane, now six), food-boredom, a shift in rhythm, or readily available snacks. We have tried to built our new routine around regular meal-times to help. At any rate, thanks for the recipe! I can’t wait to try it out!
