Go-to Healthy Meals: The Search Is On
Sorry this whole week is focusing on Health & Wellness! It’s helping me stay motivated. I’m really eager to build up a bank of go-to healthy meals for lunch and dinner. (Right now, I’m really happy with my go-to breakfast smoothie).
This week for dinner, we are going to try these Roasted Cauliflower Taco Bowls.
For lunch, I’m going to try this really simple Mediterranean Lunch Box.

I have been all about the tofu banh mi lately, although more often in salad form than sandwich.
I just make up jars of the pickled stuff (usually onions and radishes, occasionally carrots) in a jar so I can fish them out as needed.
