Hungryroot: Quick Meals, Vegetarian-Friendly
Matt and I have been using a local meal-kit delivery service for a while now. I appreciate the nearly zero-waste approach. Everything comes in reusable containers/jars that they pick up when they drop of the new week’s ingredients. However, I’m really tired of overly-healthy meals (even though I am focused on getting healthy). Last week, for example, one of the meals was lentils and vegetables, and I just couldn’t do it. Go-to Healthy Meals: The Search Is On
Sorry this whole week is focusing on Health & Wellness! It’s helping me stay motivated. I’m really eager to build up a bank of go-to healthy meals for lunch and dinner. (Right now, I’m really happy with my go-to breakfast smoothie).
This week for dinner, we are going to try these Roasted Cauliflower Taco Bowls.
For lunch, I’m going to try this really simple Mediterranean Lunch Box.
