    Hungryroot: Quick Meals, Vegetarian-Friendly

    September 1, 2020 / No Comments

Matt and I have been using a local meal-kit delivery service for a while now. I appreciate the nearly zero-waste approach. Everything comes in reusable containers/jars that they pick up when they drop of the new week’s ingredients. However, I’m really tired of overly-healthy meals (even though I am focused on getting healthy). Last week, for example, one of the meals was lentils and vegetables, and I just couldn’t do it. I decided to give Hungryroot a try.

The thing that attracted me to Hungryroot was the promise of dinner prep taking only 10-15 minutes. That’s my kind of timeline!

Favorite Dress: Here’s What I’m Loving

    August 31, 2020 / 2 Comments

Go-to Healthy Meals: The Search Is On

    August 26, 2020 / 3 Comments
    go-to healthy meals

Sorry this whole week is focusing on Health & Wellness! It’s helping me stay motivated. I’m really eager to build up a bank of go-to healthy meals for lunch and dinner. (Right now, I’m really happy with my go-to breakfast smoothie).

This week for dinner, we are going to try these Roasted Cauliflower Taco Bowls.

For lunch, I’m going to try this really simple Mediterranean Lunch Box.

Are you enjoying any healthy vegetarian recipes lately?
